How should chocolate be stored?

Chocolate should be stored in a cool (but not refrigerated), dry place, out of direct sunlight and away from strong odors (smoke, spices, moth balls, pine-scented cleaners, potpourri, etc.)

Can I freeze my chocolate?

We don’t recommend freezing chocolate.

Why does my chocolate have gray or white discoloration?

This is called “fat bloom” caused by the separation of cocoa butter from the chocolate due to temperatures over 80° F. It is still perfectly edible, but not as appealing to look at.
